Today I’ll share with you one of my favorite macrobiotic sweets for summertime: strawberry slivers. They’re delicious, healthy, fill you up and are made in no time. And they contain almost no calories, in case that’s important.
Strawberry slivers are made from just three ingredients: agar-agar, apple juice and strawberries. Nothing else. Of course, you can substitute blueberries or any other fruit, but fresh, juicy strawberries always knock my socks off.
What is Agar-Agar?
Agar-agar is a great vegan substitute for gelatin. It’s made from algae and is flavorless and low calorie. Agar-agar should be brought to a boil for 2-3 minutes so that it can dissolve fully and to activate its thickening properties. When it cools, thickens and becomes gelatinous, so that it can be sliced and shaped. It’s soothing for the belly and stimulates digestion.
How to make strawberry slivers
500 ml organic apple juice
2 Tsp organic agar-agar
Mix the cold apple juice and the agar-agar (make sure to buy organic quality!) in a pot, checking also the instructions on the agar package as with some kinds you may need a bit less – I always use a bit more than instructed to make sure that it thickens properly. Can’t hurt.
Slice the strawberries and then cut the slices in half, placing them generously in a square form. For the apple slivers I used this silicone form*. Now bring the agar-agar to a boil and then pour it over the strawberries. Let it cool, sliver and slice and then enjoy!
P.S. my kids love this treat. You can try it with other juices or dried fruits soaked overnight, blended and then mixed with the agar-agar. Simply delicious!
